Uncle Bo's BBQ
On one of our not-too-frequent trips across the border into Bullhead City we remembered Uncle Bo's had recently opened. So we made a quick pit stop for late lunch - early dinner.
The first thing you notice are the grills, smokers and outdoor pit in front of Uncle Bo's. This alone has a promise of good BBQ!
The decor in Uncle Bo's is very nice. We had not dined at the 310 Grill (the previous occupant) but it is obvious the inside had been remodeled.

The Uncle Bo's menu has many choices of meats, combos, and even BBQ choices by the pound.

Our orders were both the combo dinners. One Brisket (1/2 lb.) and one 1/2 slab of Baby Back Ribs. Each combo includes one 8 oz. side, a pickle spear, and a roll. $12.99 for a one meat combo*.
The Brisket was excellent, so tender you didn't need a knife to cut it. Our very friendly waitress provided a cup of the BBQ sauce and their Bourbon Sauce. The Bourbon Sauce was lighter and one of the best we have had with BBQ. The Coleslaw was just OK. Might try something else as a side next time.
The 1/4 slab of BBQ Baby Back Ribs were among the best we have tried in the area. Tender, full of flavor, fall off the bone, and not overly covered in sauce. The Collard Greens side was outstanding. Definitely worth a substitute instead of coleslaw as a side. The menu says all the sides are made from scratch.
*Note: the Rib combo comes with Spare Ribs, an upgrade to Baby Back Ribs was $3 more. But most likely well worth it.
Service was fast, friendly and above and beyond very good and helpful. We didn't even notice until after we left that she had even "comped" us our two beers.
If it lasts, Uncle Bo's could be worthy challenger for the Best BBQ in the Tri-State area. They took over the location that had previously housed several restaurants, most recenlty the 310 Grill.
